1     cup of all-purpose flour
3     tablespoons of granulated sugar
1/4  teaspoon of salt
1     cup of cold beer (not dark)
1/2  pound of green mango, peeled, sliced 1/4 inch thick
        Canola oil
        Confectioner’s sugar for dusting


Mix together flour, granulated sugar, and salt, add beer and whisk to combine.
Dip mango slices in batter, shaking off excess, and fry in oil at 375°F, until golden, about 1 1/2 minutes on each side. Transfer fritters with a slotted spoon to paper towels to drain. Serve warm, dusted with confectioner’s sugar.
